Well, I think I've finally done it. It doesn't look great, but the batter and the frosting tasted good on the mixer beaters! I hope the final product lives up to my "taste" expectations. Many thanks to my new friend Marie for the suggestions on how to make "Philadelphia" frosting with local products. It's a little runny, but I'm hoping a stint in the fridge will help solidify it.
I'll let you all know how it goes over tomorrow at work... assuming it doesn't slide of the plate.
